I just can’t help myself, I made another chocolate chip cookie recipe. This one came about because of a conversation with my niece. She was looking for a cookie recipe that was chewy in the center but had a slightly crisp outer edge. I accepted this challenge and so I created another cookie recipe.
So here it is, the best of both of both worlds cookie. So what makes it chewy yet crisp?
Sugars Their Role in Cookies
Does it matter? It does because the sugar in a chocolate chip cookie can determine its chewiness and flavor.
Brown sugars these sugars are blended with varying amounts of molasses. Making for chewier caramel style cookies with lovely complex flavors. Did you know that the molasses reacts with baking soda allowing the cookie to rise slightly.
White Sugar this sugar will give you a sweet crispier style of cookie. These cookies do tend to have less of a complex flavor which if you are wanting to feature other flavor profiles then this would be a good way to go.

How To Make This Chocolate Chip cookies
Start by preheating your oven and lining your baking sheets with either parchment paper or silicone mats.
Into a mixing bowl add your sugars and softened butter and using a stand mixer or and electric beater blend them together thoroughly.

Next add in a room temperature egg and vanilla extract. An egg that is at room temperature will mix in a lot better than a cold egg. It also will stop the butter cooling and curdling the cookie dough. If your egg is cold fresh out of the fridge place the whole egg into some very warm water for a couple of minutes before breaking into the mixing bowl.
Into a separate bowl add the flour, baking soda and a pinch of salt, give it all a mix to blend together. Now add this to the main mixing bowl.

Just as the flour is starting to incorporate into the rest of the ingredients add the chocolate chips. Now mix until you form a rough looking cookie dough ball.
Using the small sized cookie scoop. place balls of the chocolate chip cookie dough onto the lined cookie sheet. They should be roughly an inch half to two inches apart.

Bake for around 15 minutes or until they are lightly golden around the edges. Place them onto a cooling rack to finish cooling.
They are the best enjoyed when they are still warm though so don’t wait too long.

Tips For The Perfect Chocolate Chip Cookie
- Use softened butter. Some chocolate chip cookie recipes will call for you to melt the butter but this recipe doesn’t. Instead we want a very soft pliable butter, although it shouldn’t be at melting point.
- Try to have all of the ingredients at room temperature. This includes the egg. If your egg is cold place it in some warm water for a couple of minutes to warm it up.
- Do not over bake the cookies it is easily done. You are better with an under baked than and over baked cookie. So keep a close eye on them.

Another Chocolate Chip Cookie Recipe
The best of both worlds a crispy yet chewy chocolate chip cookie recipe. It is deliciously sweet and chocolatey
Ingredients
- ½ cup Softened butter , 115g
- Packed ½ cup Dark brown sugar , 110g
- ½ cup Granulated sugar , 100g
- 1 Large egg, at room temperature
- 1 tsp Vanilla extract
- 1 ½ cups All purpose flour , 235g
- 1 tsp Baking soda
- Pinch salt
- Heaped ½ cup Chocolate chips , 100g
Instructions
- Preheat the oven to 325°F (160°C). Line two baking trays with parchment paper or silicone baking mats.
- In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar together until light and well combined.
- Beat in the room temperature egg and vanilla extract until smooth.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Add the dry ingredients to the butter mixture. When the flour is almost incorporated, add the chocolate chips and mix just until a soft cookie dough forms.
- Using a small cookie scoop or tablespoon, scoop the dough onto the prepared baking trays, leaving about 1½–2 inches between each cookie.
- Bake for 14–16 minutes, or until the edges are lightly golden and the centres are just set.
- Let the cookies cool on the baking tray for 5 minutes before transferring them to a wire rack to cool completely. Enjoy warm for the best texture.
Notes
- Make sure you butter is nice and soft. Although it shouldn't be at melting point.
- Having a room temperature egg will blend the best and stop the butter firming back up. You can place a cold egg into very warm water for a couple of minutes to warm it up.
- You can use milk, semi sweet or dark chocolate chips this really comes down to personal preference.
