What is the difference between a Crumble and a Crisp?
Simple answer is not much.
A Crumble is technically English and a Crisp is American. Which seems to be a common thread on so many subjects. I personally find crumbles have a more doughy consistency than a crisp. and that is because technically the topping doesn’t always contain oats and is mainly made with flour, butter and sugar.
I tend to break the rules and I like oats in my crumble. not too many though I don’t want it to dry out my crumble I still want doughy. Yes I am like goldilocks and want it to be just right.
Apples?
Does it matter what apples you should use? If I had written this last week I would have said no its fine just go for it. But then I made one with green granny smith apples and my husband hated it. Now, its not to say you can’t use those apples. If you like it not too sweet and more on the tangy tart side then go for it. In our house we don’t like overly sweet but some sweetness is preferred.
So, with this said I like to recommend gala’s they are a good all round apple. And one you can get year round.
If you want very sweet then I would say try honey crisp or any of those sweeter varieties.
Flour?
Again same thing with flour. Go for a plain all purpose flour it will give you the best texture. Its light and doughy.
I remember in school making a crumble and the goal was make it as high fiber as we could. So, if you fancy going this route and experimenting with different flour varieties, like for example wholewheat or spelt to name a couple, then you will need to alter the quantities of other ingredients.
My top suggestions would be to either up the butter or to reduce the flour amount, although with doing that you would loose some topping, which would suck.
There’s also the subject of nuts too. I used Flaked almonds for this recipe I find they add good texture without altering the flavour too much. But, again, feel free to experiment using other nuts just make sure they aren’t too chunky. Unless that’s something you like, personally I am not a fan.
Tools you will need

- Wooden spoon/ spatula
- 8 inch x8 inch overproof baking dish
Ingredients for the apple crumble with oats
- Apples. I prefer to use gala or something similar in flavour and sweetness level.
- Honey. Good quality runny honey. I always go for one that is locally made near me
- Starch. I used corn starch
- Butter. I prefer unsalted that way I add my own salt.
- Water
- Cinnamon
- Salt. Use sea salt
- Flour. Use a good white all purpose
- Sugar. Granulated is fine. could use golden sugar too if you like it sweeter.
- Rolled Oats. Do not use quick oats or steel cut oats.
- Baking Powder.
- Flaked Almond. Or nut of choice. or you can omit all together
- Nutmeg
- Ginger powder
- Either Sourdough discard or Plain Yogurt.
Step by Step How to make Apple Crumble with Oats
Apple filling.
Peel, core and dice the apples, add them to a saucepan, along with the honey, cornstarch, cinnamon, butter, Water and salt.
Heat on low only until the honey and butter have melted. you just want to coat the apples not cook them. We don’t want mushy apples at the end.
Place into a greased 8 inch x 8 inch ovenproof baking dish
Crumble Topping
In a bowl, you can use a stand mixer with the paddle attachment, if you have one. Add the flour and diced butter, rub in with your fingers until it resembles breadcrumbs.
Add the remailing dry ingredients. Rolled Oats, Sugar, Cinnamon, Nutmeg, Ginger Powder, baking powder and salt. mix together thoroughly.
Finally add the Discard or Yogurt. Mix into the dry ingredients with a wooden spoon until it is fully combined. it should resemble a crumbly like texture.
Spoon the topping over the apples evenly so that they are completely covered.
Bake at 375F, 355F Fan, 190C, Gas Mark 5 for 40 minutes. The fruit should be bubbly and the top slightly golden.
Leave to cool for around 10 minutes
Serving Suggestions
Vanilla Ice cream, Whipping Cream or Custard. If your adventurous you could have them all.

- 1 1/2 Cup White All purpose Flour
- 1/2 Cup Unsalted Butter
- 1 Cups Rolled Oats
- 1/4 Cup Crushed Flaked Almonds
- 1/2 Tsp Baking Powder
- 1/2 Tsp Sea Salt
- 1/2 Cup Granulated Sugar
- 1 Tsp Cinnamon
- 1/2 Tsp Ginger Powder
- 1/4 Tsp Nutmeg
- 1/4 Cup Sourdough Discard or Plain Yogurt
Instructions

Alterations Options
Nuts. I used almond, but walnuts, peanuts or hazelnuts, would be nice to use instead or you could also do a combination.
For flour I use a white white all purpose. If you decided to use a wholewheat or another whole grain flour then i would highly recommend upping the quantity of butter and possible the discard/yogurt. Otherwise it may come out quite dry.
You can use frozen apples, I have in the past. If you do I would omit the water.
