Avocados
Many of us have heard the term superfood and one of the main ingredients in these truffles is avocado.

Cocoa Powder

This is the last ingredient for the avocado truffles and it is the sweet element. I have heard that if you suffer from seasonal allergies then eat local honey to alleviate the symptoms which is pretty amazing. But honey also has a lot more going for it than just seasonal allergies

How to make the chocolate avocado truffles
Slice the avocados in half remove the stone and scoop out the flesh.
Place the flesh into a medium small mixing bowl and using a fork or spoon mash the ripe avocados down as smooth as you can.
Add in the coconut oil and honey and a quarter of the cocoa powder. Give it all a good mix.
Add in a little more of the cocoa powder and mix again.
Repeat this until all of cocoa powder is used. Give it one last good mix, it should be thick and creamy at this point. I like to use a silicone spatula to mix it because it scrapes down the the sides very cleanly.
Making the avocado truffles into balls
Place the bowl into the fridge for half an hour to an hour. This will allow it to firm up slightly making it easier to form the ball.
Line either a baking sheet or plate with parchment paper.
If you choose to roll the truffles in coconut or cocoa powder take two small bowls and add the coconut to one and cocoa powder to the other.
Take small pieces of the chocolate mixture and gently roll into a ball. Then either place it straight onto the parchment or roll it in coconut or cocoa powder and then onto the parchment.
Repeat this process until all of the mixture has been used.
Now you will more than likely need to wash your hands every so often as this mixture is quicky sticky and messy.
Place the tray into the freezer for at least 2 hours. Once the truffles have firmed up they can be placed into an airtight container or into a freezer bag and kept in the freezer until you are ready to enjoy them.

Notes
- Try to use a high quality cocoa powder to get the most benefits
- You can use runny or creamed honey
- Make sure to use ripe avocadoes they need to be soft be not over ripe either.
- I like to add a tiny pinch of salt to the avocado.
