What Are Courgettes?
Courgettes are a summer squash and come from the gourd family of vegetable plants. Depending on where you live they are also known a zucchinis. One word having French origins while the other has Italian.
If you are a gardener then you will know how easy it is to grow this vegetable. As a new gardener then I would highly recommend growing a courgette, they can be a very rewarding plant to grow in a vegetable garden. In fact they can be quite prolific I am forever giving them away because I have such an abundance.
Courgettes do tend to be quite bland, it is a reason why many people don’t like them. When cooked they tend to be be tasteless and mushy not a great combo. So learning how to cook them is key and once you know how then they become one of the most versatile vegetables around. They can be in baking, sauteed, fried, roasted, grilled, boiled. They can be savoury or sweet, courgettes truly are a fantastic vegetable.
One of my favourite ways to eat them is turning them into fritters so let me show you how to make some amazing courgette fritters.

What you will need to make Courgette Fritters
Here is a list of the tools and ingredients that you will need to make these courgette fritters. They are simple and should be readily available where ever you are located.
I have also added a few substitutes or alternatives for the ingredients if you do have any issues with finding what you need for the recipe or if you just fancy switching it up a little.

How to make Courgette Fritters
Begin by grating the cougette into a bowl and sprinkle it will a little salt, this will help to draw the moisture out. Let this stand for around ten minutes.

While that sits grate the swiss cheese and add it along with all of the other ingredients into a mixing bowl.
Tip the courgette out into a tea towel or a cloth, squeeze it really well to get as much juice out of it as you can.

Place the squeezed grated courgette into the bowl that has all of the other ingredients already in it. Using a wooden spoon give it all a really good mix so that everything is fully combined.

Place the frying pan over a medium high heat and add a little oil. Once the oil is hot add a spoonful of the courgette fritter mixture. If your pan has room you can make more than one at a time.

Carefully flip the fritter over after around three minutes. The fritters do have a tendency of sticking a little this is because of the cheese, gently push the spatula under the fritter to get it loose, you may need to come at it from a couple of sides. Then gently flip it over and cook for another couple of minutes.
If you find that your frying pan is getting too hot turn the heat down a little but it does need to stay hot for the fritters to become a little crispy around the edges.
Serve the courgette fritters right away if you can although they can be kept in the fridge for around five days and reheated.

Frequently Asked Questions about Courgette Fritters
Do I have to use Italian Seasoning? If you do not have access to the Italian herb blend then you can make your own using basil, parsley, oregano, marjoram, rosemary and thyme. Here is a recipe you could try. If this is too much then I would just add basil and parsley in its place. The recipe also call for dried herbs but you can always use fresh herbs if you prefer.
Are there any other cheeses I could use in place of Swiss? Other options you could also go with include Emmental, gruyere, Jarlsberg or gouda.
Could I make this into a gluten free recipe? Yes absolutely, you can use an all purpose gluten free flour blend. The flour acts like a binder for the fritters so the flour will need good binders in it. The recipe can also be vegan if you use a vegan swiss cheese there are a lot of options out there to choose from.

Using simple easy ingredients these courgette fritters are crisp, golden and packed full of delicious flavour. Perfect as a side or eaten alone as a snack.
Ingredients
- 900-1000g Courgette (2 cups grated)
- 120g Swiss cheese, (1 packed cup)
- 35g Plain flour, (⅓ cup)
- 1 Spring onion, finely chopped
- 3 Large eggs
- 1 Garlic clove
- ½ tsp Onion powder
- ¼ tsp Paprika
- 1 tsp Italian seasoning, See my FAQ in my main post.
- Salt and pepper to taste. around ¼ of each. Plus ¼ tsp salt for the grated courgette.
Instructions
- Start by grating the courgette into a bowl and sprinkling it with a little salt to draw out the moisture. Leave it to stand for about ten minutes. While you wait, grate the Swiss cheese and place it in a mixing bowl along with all the other ingredients.
- Once the courgette has sat, tip it out onto a clean tea towel or cloth and squeeze it firmly to remove as much liquid as possible. Add the squeezed courgette to the mixing bowl with the other ingredients and stir everything together well with a wooden spoon until fully combined.
- Set a frying pan over medium-high heat and drizzle in a little oil. When the oil is hot, spoon some of the courgette mixture (around a ¼ cups worth) into the pan. If there’s space, you can cook several fritters at once. Let them cook for about three minutes, then gently slide a spatula underneath to loosen them before flipping. Cook the other side for another couple of minutes until golden.
- If the pan becomes too hot, lower the heat slightly, but keep it hot enough so the fritters develop crisp edges.
- Serve them right away for the best taste, though they can also be stored in the fridge for up to five days and reheated when needed.
