Tools required
- Large freezer bag, bowl or food processor
- Medium to large sized pot
- Wooden spoon or spatula
- Kitchen scale or measuring cups
- Measuring spoons
- Double boiler or microwave safe bowl
- Parchment paper
- 9×9 baking tin or Swiss roll tin.
Ingredients for the digestive biscuit squares
- Digestive biscuits. They don’t need to be any fancy digestives any you find will work just fine for this recipe.
- Honey. You will need to use a runny honey.
- Sugar. Use either granulated or castor sugar whichever you have in you pantry already.
- Butter
- Drinking chocolate
- optional. Raisins. You could also add nuts if you wanted too they would be a great addition to the squares.
- Milk chocolate. You can also use dark chocolate if that is what you prefer, personally I find milk chocolate works the best for these squares. Use any brand of chocolate that you like, it should be a good quality chocolate. I used a nice Belgian milk chocolate for my squares.
How to make digestive biscuit squares
Begin by crushing the digestive biscuits into a crumb. There’s a few ways that you can do this. I like to place the biscuits into a sealed ziplock freezer bag break them up as best i can with my hands, then I take a rolling pin to smash them into even finer pieces.
Another option is to use a bowl instead of a bag, or you could also use a food processor too.
In a medium sized pot add the butter, sugar and honey. Using a medium heat setting melt them down.
Once the sugar has dissolved remove the pot from the heat.
Add in the crushed digestives, hot chocolate powder and raisins or nuts if you have chosen to use them.
Give it all a good mix so that the mixture resembles a buttery crumb.
Take a 9×9 or similar sized baking tin and line it with parchment paper. I like to grease the edges with a little butter. I find the paper then sticks to the sides nicely.
Pour the crumbly biscuit mixture into tin and spread about evenly.
Using your hands press the mixture down firmly into the tin.
Place the tin to the side whilst we melt the chocolate.
Melt the chocolate
You can either use a double boiler or the microwave to melt your chocolate. I use a double boiler, one because I find I can control how it melts easier and two I do not own a microwave.
If you use the microwave, however, be sure to keep a close eye on the chocolate, taking it out and stirring it every few seconds to prevent it from burning
If you used a double boiler then please be careful of any steam that comes from the boiling water it is very hot and can burn you. Also when removing the bowl of melted chocolate be careful as the bowl may be quite hot.
Once the chocolate has melted and looks shiny and silky pour it over the biscuits.
The chocolate should be thin and pourable so all you should need to do is tilt the tin around and let the chocolate coat entire surface.
Chill
Now place the tin into the fridge for around two hours or until it has firmed up and set.
Remove it from the fridge and lift the parchment paper out and place it onto a cutting board.
Using a sharp knife cut into roughly 2×2 squares.
They are ready to enjoy.
Store the squares in an airtight container for up to a week. They can also be frozen and stored for around 3 months.
