Do you enjoy mince pies? They are such a winter staple with the spiced fruits but they can be an acquired taste. This mincemeat muffins recipe is a wonderful bran muffin, that is soft and moist with a mild mince pie flavour.
What is mincemeat?
Firstly, it is not actual meat, well nowadays it isn’t. That is usually the first thing that is asked. So why do we call it mincemeat?
The history of mincemeat goes back a very long way which we wont go into. But what I will say is that the name literally means Finely chopped (mince) food (meat) it is that simple. I mean we still use the word mince when talking about finely chopped food.
The main difference between the mincemeat that we see today, compared to what is was like originally, was that they actually added animal meat. Over time that changed with the meat finally omitted in favour of the sweeter variety. But what did remain was the suet, that is animal fat. Some recipes omit this too making it fully vegetarian.

Tools needed for the mincemeat muffins
- Mixing bowl.
- Spatula or wooden spoon. As much as I love wooden spoons for baking, using silicone spatulas definitely do the best at scraping out the mixing bowl, getting the most batter out.
- Muffin pan, a 12 cup pan is needed for this recipe.
- Muffin cases
- Large cookie scoop I highly recommend having these scoops in your stash, they are fantastic for cookies, cupcakes and muffins.
- Measuring cups or kitchen scale
- Measuring spoons
Ingredients
- Egg, medium sized free range are the best.
- Olive oil. You can use another alternative if you prefer, like avocado, groundnut, or grapeseed oil for example.
- Golden Caster sugar. I love the sugar its like the best of both worlds, white and light brown sugar in one.
- Milk. I used a semi skimmed (2%) when I made mine, but you can use any milk that you prefer, including oat or almond milk.
- All purpose flour. You can use self raising flour too just make sure to omit the baking powder.
- Bran. The bran for this recipe is a wheat bran. Depending on where you live this might be found in your local supermarket in the cereals section by the porridge or in a health food store. If you still struggle to find it then I would suggest ordering it online like from amazon here is the link. I nearly make the mistake of buying a bran muffin mix instead of just plain wheat bran so watch out for that.
- Baking powder. Omit this if you choose to use self raising flour.
- Baking soda.
- Salt.
How to make the mincemeat muffins
These muffins are so easy to make. You don’t need any fancy gadgets for this recipe.
Begin by turning your oven on to 375F, 190C, gas mark 5
Line your muffin pan with the muffin cases you should need around 12 cases.
In a medium or large mixing bowl add the egg, oil, and sugar. Mix together well so that the sugar has dissolved, it should look a bit like soft caramel.
Next add in the milk and the mincemeat. Mix into the egg sugar mixture it should be pretty runny, like a pale brown milk.
Finally add in the rest of the dry ingredients, that will be the flour, bran, baking powder, baking soda and salt.
Fold these ingredients in well so that there is no dry clumps left in the batter.
Using a large cookie fill the muffin cases as full as you can leaving a tiny gap the top.
Place into the preheated oven and bake for 20 minutes.
Remove the muffins from the oven and carefully place them onto a cooling rack to cool before enjoying.
These mincemeat muffins will store well in an airtight container for up to a week.
Mincemeat muffin
A wonderful fruity spiced bran muffin. They are quick and easy to make without the need of any fancy kitchen gadgets. They are a perfect winter muffin recipe.
Ingredients
- 1 Medium sized egg
- 1/2 cup (90g) Golden caster sugar
- 90 mls Olive oil or similar oil
- 1 cup (250 mls) Milk
- 1 cup (280g) Mincemeat
- 1 1/4 cup (200g) All purpose flour, see note below
- 1 cup (60g) Wheat bran
- 1 tsp Baking powder
- 1 tsp Baking soda
- 1/2 tsp Sea salt
Instructions
- Pre heat oven to 375F,
- Beat together the egg, oil and sugar until they are fully combined, it should look a bit like soft caramel
- Add the milk and mincemeat, and mix well
- Add in all of the dry ingredients, fold in so that it resembles batter with no dry clumps.
- Spoon the batter into muffin cases fill nearly the top.
- Bake for 20 minutes
- Remove from the oven, place onto a cooling rack. Let the muffins cool completely before eating.
Notes
- You can use any milk of choice.
- Oil substitutions include avocado, grapeseed, or groundnut.
- Fill the muffin cups so that there is barely any clearance at the top.
- You can use self raising flour in place of the plain all purpose flour just make sure to omit the baking powder, still use the baking soda (bicarbonate or soda) though.
