This creamy gluten free cheese sauce is so quick to make and very delicious. It can be tailored by adding different spices, herbs and cheese varieties. It is such a versatile sauce that can be used in place of most gluten cheese recipes.

First you need to look at what you are using your gluten free cheese sauce for. If it is to go with vegetables like potatoes or cauliflower then a stronger cheese might be a nice choice. If it is for pasta like macaroni then a milder cheese would be preferable.
Whatever you decide to use the options are truly endless. So, why not have fun with it and experiement with different blends.

A few suggestions
- Dutch cheeses like Edam and Emmental.
- Gouda

- Monterey Jack
- Cheddar (try to not use the old aged cheddars as they don’t tend to melt that well)
- Havarti
- Parmesan, this is best when blended with a cheddar and gruyere
- A touch of blue cheese blended together with a gruyere or any Dutch cheese

Ingredients
- Cream cheese, any full fat variety
- Butter, you can choose to use salted or unsalted, this is a personal choice.
- Milk, try to use a full fat milk if you can although any will work. I haven’t tried milk alternatives so I can’t say how they will work
- Cheese, you can choose your favourite cheese sauce cheese for this recipe. I will be using a blend of gouda and aged cheddar
- Optional herbs and spices depending on taste or recipe.
How to make the gluten free cheese sauce
First, set your stove to medium-low heat. Then, gently place the cream cheese and butter into a medium-sized saucepan to begin the process.

Let this melt down stirring it every so often. While this is melting grate the cheese you have chosen to use.
Once the cream cheese has melted add in the milk. You will need to use the whisk for this part to blend the two ingredients together. Don’t worry if it looks like it has curdled it tends to look like that at first. Continue to gently whisk the milk and cream cheese every so often until it looks creamy.

Add in the grated cheese and stir with a wooden spoon or spatula until it has completely melted. Season with salt and pepper and along with any other spices or herbs you would like to use.

And just like that, the sauce is ready to use in any recipe you have in mind.

So, for the classic mac and cheese, all you have to do is stir the pasta into the sauce—and just like that, it’s ready to enjoy!

Gratin potatoes, I love any kind of cheesy potatoes. This is a great recipe to try but if you would like to make it gluten free then you could use this sauce in place of the gluten sauce. Follow the rest of the recipe as is in regards to the potatoes and the baking.

Ingredients
- 250g Full fat cream cheese
- 1 tbsp Butter
- 2/3 cup (120mls) Milk
- 2 heaped cups (220g) grated cheddar Cheese. see note for alternates
- Salt and pepper to taste
